Spinach
Spinach is very sensitive to day length and most common spinach varieties bolt, prematurely set seed, in Alaska's long days before maturing an acceptable crop. A joint program between Denali Seed Company and the University of Alaska has resulted in a testing program that selected several varieties that perform well, producing an good crop before bolting during Alaska's long days. Spinach must be planted in early spring as soon as the soil can be prepared and mid summer to avoid growing during the longest days of summer.
